How to make it
- Break cauliflower into florets, and put in saucepan with broth or water. Cook on medium-low until very tender. Add a little bit more liquid if it looks like it will boil dry.
- Drain off almost all the liquid, and set it aside.
- Put the cauliflower into a food processor and process until very smooth. OR you can blend it with a stick blender, but it won't have quite the same texture.
- Pulse in butter, salt and pepper, and if it's too thick, add a bit of the broth/water to desired consistency.
