How to make it

  • Cook celery, bell pepper, onion and garlic in oil until tender (here is where I add the tomato paste -- I saute it in right at the end of the vegetables becoming tender. It may brown just a bit on the bottom -- just make sure you scrap it up when you add the liquids!) Add remaining ingredients, except catfish, cover and simmer, covered for 30 minutes. Add catfish, cover and simmer for 15 minutes until catfish flakes Serve over rice. Makes 2 gallons.
