Catfish Gumbo

- 6-9 cup catfish filets, cut into 1" pieces shopping list
- 1 cup chopped celery shopping list
- 1 cup chopped bell pepper shopping list
- I cup chopped onion shopping list
- 2 cloves garlic, finely chopped shopping list
- 1/3 cup cooking oil shopping list
- 4 cup boiling water shopping list
- 1 qt. canned tomatoes shopping list
- 2 pkgs. frozen sliced okra shopping list
- 4 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1/2 tsp thyme shopping list
- 2-3 bay leaves, crushed shopping list
- 1 6-oz. can V-8 juice (I omit, because of the salt and use a can of tomato paste) shopping list
How to make it
- Cook celery, bell pepper, onion and garlic in oil until tender (here is where I add the tomato paste -- I saute it in right at the end of the vegetables becoming tender. It may brown just a bit on the bottom -- just make sure you scrap it up when you add the liquids!) Add remaining ingredients, except catfish, cover and simmer, covered for 30 minutes. Add catfish, cover and simmer for 15 minutes until catfish flakes Serve over rice. Makes 2 gallons.
