Savory Pumpkin Soup

- 2 tablespoons butter shopping list
- 1 medium onion, small dice shopping list
- 2 cloves garlic, minced shopping list
- 2 cups low sodium chicken broth shopping list
- 2 15oz cans, solid pack pumpkin (not pie mix) shopping list
- 1 cup half ‘n’ half shopping list
- 1 teaspoon salt (or to taste) shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1 1/2 teaspoons curry powder (use this seasoning a 1/4 tsp at a time until desired taste is achieved) shopping list
How to make it
- 1. In a small stock pot over medium heat, saute the onion in butter until tender. Add the garlic and chicken broth and bring to a low boil. Reduce heat and add canned pumpkin, stirring to blend well. Bring to a simmer.
- 2. Slowly pour in half ‘n’ half, continuously stirring to prevent scorching. Add seasonings; stir again, and then taste until seasonings are satisfactory.
- 3. Heat through and serve immediately.
