How to make it

  • In a small saucepan over medium-high heat, combine sugar, water and ginger.
  • Bring to a boil.
  • Stirring constantly, boil until mixture reaches a light syrup consistency, about 3 mins.
  • Remove from heat and stir in vanilla.
  • Cool slightly. I
  • n a dessert dish, gently stir fruit slices and ginger syrup until well mixed.
  • Cover and refrigerate until well chilled, about 2 hours.
  • Serves 4
