How to make it

  • Preheat oven to 425 degrees.
  • Remove beet greens, reserve for a different recipe
  • Wash and rinse beets.
  • Add enough olive oil to coat beets in a bowl.
  • Roll beets around in oil and lightly salt.
  • Seal beets in aluminum foil and place in oven.
  • Roast until fork tender.
  • Cool beets.
  • Slide skins off after cool, or before if you want to burn your fingers :).
