- Wafers: shopping list
- 1 pkg (18.25 oz) Betty Crocker chocolate fudge cake mix shopping list
- 3 Tbsp shortening, melted shopping list
- 1/2 c. cake flour shopping list
- 1 egg shopping list
- 3 Tbsp water shopping list
- Coating: shopping list
- 3 bags (12 oz each) semi-sweet chocolate chips shopping list
- 3/4 tsp peppermint extract shopping list
- 6 Tbsp shortening shopping list
How to make it
- Combine the cookie ingredients in a large bowl, adding the water a little bit at a time until the dough forms. Cover & chill 2 hours.
- Preheat oven to 350.
- On a lightly floured surface, roll out a portion of the dough to just under 1/16" thick. To cut, use a lid from a spice container with a 1-1/2" diameter. Arrange the cut dough rounds on a cookie sheet sprayed with non-stick spray. Bake 10 min. Remove and cool completely.
- Combine chocolate chips with peppermint extract and shortening in a large microwave bowl. Heat on 50% power for 2 min, stir then heat an additional minute. Sitr again and heat for a minute at a time until smooth.
- Use a fork to dip each wafer in the chocolate, tap the edge of the bowl to let excess chocolate run off, then place cookies on baking sheets lined with wax paper. Refrigerate until firm.
