How to make it

  • In a Caldero or heavy pot render the fatback over moderate to med low heat until the pieces are crisp and golden.
  • Add water and salt and raise the heat to bring to a boil.
  • Rinse the rice under running cool water until the water runs clear. Drain
  • Stir the rice into the pot and bring to a boil.
  • Reduce the heat to moderate and cook uncovered until the liquid level reaches the surface of the rice.
  • Reduce the heat to low. Stir the rice from the bottom up and cook covered for 15 mins.
  • Stir the rice again, mounding it, and cook for 15 mins more. Fluff with fork
