Torrejas (spanish Toast)

- 12 Slices French bread, Cut 1/2" thick shopping list
- 1 1/4 C milk shopping list
- 1/8 tsp salt shopping list
- 1/2 tsp ground cinnamon shopping list
- 1 1/2 C sugar shopping list
- 3/4 C water shopping list
- 1 cinnamon stick shopping list
- 4 Large eggs beaten with a pinch of salt shopping list
- vegetable shortening or butter shopping list
How to make it
- Trim the bread crust off the slices.
- Mix the milk and salt. Soak the bread slices in it the dust them with cinnamon. Let stand 15-20 mins.
- In the meantime, boil the sugar, water and cinnamon stick over mod heat to make a light syrup- 222 F on a candy thermometer-- about 10 mins.
- Dip the bread slices in the egg one at a time and fry until golden brown, turning once. Dip in the egg only as many slices as you can fry at a time.
- Drain on paper towels and set in one overlapping layer in an appropriate platter.
- Pour the syrup over them and refrigerate before serving.
- NOTE: You may add 1/3 C cream sherry or Muscat wine to the milk
