How to make it

  • Trim the bread crust off the slices.
  • Mix the milk and salt. Soak the bread slices in it the dust them with cinnamon. Let stand 15-20 mins.
  • In the meantime, boil the sugar, water and cinnamon stick over mod heat to make a light syrup- 222 F on a candy thermometer-- about 10 mins.
  • Dip the bread slices in the egg one at a time and fry until golden brown, turning once. Dip in the egg only as many slices as you can fry at a time.
  • Drain on paper towels and set in one overlapping layer in an appropriate platter.
  • Pour the syrup over them and refrigerate before serving.
  • NOTE: You may add 1/3 C cream sherry or Muscat wine to the milk
