How to make it

  • Season chicken pieces with1/2 of salt, pepper, cajun seasoning
  • and paprika. Rub well
  • Add other 1/2 of mix to flour roll chicken in flour.
  • Add 1/2 to 3/4 inch oil to a large, heavy skillet.
  • Heat to approximately 365 degrees F.
  • Place chicken pieces in hot oil.
  • Cover, and fry until golden, turning once, 15 to 20 minutes.
  • Drain on wire rack. Then serve on buns and top with anything you like.
