Ingredients

How to make it

  • Bring 2-1/2 quarts of unsalted water to a boil. Cook orzo, uncovered 7-8 minutes. Drain, set aside.
  • Mix flour, salt, pepper and garlic powder in a 1-gallon zip bag. Heat oil in deep skillet over medium high heat.
  • Slice tenderloin into ¼” slices (cook chops whole) and shake in flour mixture to coat. Cook in oil until golden brown on first side 5-6 minutes. Turn and cook until internal temp reaches 160 degrees – about 5-6 minutes more.
  • While pork is cooking, squeeze lemon, strain out seeds. Mince parsley.
  • Remove cooked pork and set aside. Melt butter in the skillet and remove from heat. Add lemon juice, parsley and honey, stir. Pour hot, drained orzo into skillet and stir to coat. Serve pork on bed of orzo.
  • Serves 4
  • Approximate preparation time: 20 minutes
  • NOTES:
  • Add ¼ cup slivered almonds, toasted, to orzo/butter/lemon
  • Decrease honey to ½ Tbsp.
  • Increase lemon juice a bit.
