Stuffed Pesto Feta Chicken Filet

- 1/2 (or whole) large bell pepper shopping list
- fresh spinach shopping list
- feta cheese shopping list
- pesto shopping list
- 2 large chicken filets shopping list
How to make it
- prep fillings, dice pepper to whatever size you like...
- mix spinach and peppers with cheese and pesto, make as much as you have because you can always use what is left over as a simple salad.
- clean chicken filets, cut through the center so that there is room for stuffing.
- stuff chicken with filling.
- if grilling maybe tie with a string, or lightly oil a small skillet and do it on the stovetop. looks good with the lines from the grill, or if in skillet brown to crispy.
- cook, just make sure that the chicken is cooked through as it's thicker with the filling.
- enjoy.
