How to make it

  • prep fillings, dice pepper to whatever size you like...
  • mix spinach and peppers with cheese and pesto, make as much as you have because you can always use what is left over as a simple salad.
  • clean chicken filets, cut through the center so that there is room for stuffing.
  • stuff chicken with filling.
  • if grilling maybe tie with a string, or lightly oil a small skillet and do it on the stovetop. looks good with the lines from the grill, or if in skillet brown to crispy.
  • cook, just make sure that the chicken is cooked through as it's thicker with the filling.
  • enjoy.
