Watermelon Lime Sorbet

- Four cups diced watermelon - 1" cubes shopping list
- 3 TBS honey or heavy simple syrup (recipe follows) shopping list
- Zest of one lime shopping list
- 2 TBS lime juice shopping list
- 1TBS white wine such as Pinot Grigio - optional shopping list
How to make it
- Dice watermelon and put in blender or food processor. Add lime zest, juice and honey/or syrup, and wine if using and blend very well to liquify ingredients.
- Put blended ingredients into ice cream maker and chill according ice cream makers instructions. (About 20 min) remove and put into container and freeze about 1-2 hours.
- Note - save time and buy seedless watermelon. Heavy simple syrup is a 2 to 1 ration of sugar and water. Make a batch up and keep in fridge to use other sorbets. 1 cup sugar, 1/2 cup water, heat on stove just till sugar is dissolved. Let chill completely before using.
- Why add wine to your sorbet? The wine will help to make your sorbets smoother. This method is only recommended for fruity sorbets that do not include coconut milk, dairy or candy pieces.
