How to make it

  • 1- Add eggs and flour to food processor and pulse until a dough ball forms around blade.
  • 2- Turn dough out onto floured surface and knead until no longer elastic, but not too tough
  • 3- roll out dough until 1- 2 mm thick ; always roll away from you with rolling pin and rotate dough as you work; Dust with additional flour as needed.
  • 4- place a dry, floured towel on top of dough and allow to sit and dry for 5-1 0 minutes (longer if air is humid or less if room is dry) Dough should be dry, but not cracking.
  • 5- working in sections about 3" wide, slice dough with pizza cutter into 1/8" wide strips (thinner for spaghetti and thicker as desired)
  • 6- gently lift strips of pasta and twist into loose nests,place on clean, dry floured towel and dust again with flour. See Photo
  • 7- repeat with remaining pasta dough
  • 8- Allow to sit out until ready to cook.
  • 9- To cook: boil in salted water for about 5 minutes or until al-dente.
