How to make it

  • Dump everything up to the cilantro into a 3 quart crock pot, turn it on, and go away for the day. At mealtime, take out the chicken, shred it with two forks, and add it back to the pot. Throw in the diced avocado, cilantro and about 2 tablespoons of bottled lime juice if you are not using fresh lime wedges at serving. Stir well to distribute evenly. Serve, topped with the queso fresco and tortilla strips and fresh lime wedge, if using.
