Chicken Tortilla Soup (Gaye's Version)

- 2 skinless boneless chicken breast halves (frozen is fine) shopping list
- 1 cup chopped onion shopping list
- 3 garlic cloves, pressed or minced shopping list
- 1 red bell pepper, chopped shopping list
- 1 small jalapeno, seeds removed, finely minced shopping list
- 2 teaspoons chili powder shopping list
- 1/2 teaspoon crushed red pepper flakes shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
- 1/2 teaspoon cumin shopping list
- 2 cups frozen corn kernels shopping list
- 1 - 14 1/2 oz can Mexican style stewed tomatoes shopping list
- 2 - 14 1/2 oz cans low-sodium chicken broth shopping list
- 1 - 15 oz can black beans, drained and rinsed shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 1/2 of a ripe avocado, diced shopping list
- 3 oz queso fresco cheese, crumbled shopping list
- packaged crispy tortilla strips, broken tortilla chips, or cut up tortillas, crisped in the oven or in a fry pan shopping list
- 8 lime wedges or approximate equivalent bottled lime juice shopping list
How to make it
- Dump everything up to the cilantro into a 3 quart crock pot, turn it on, and go away for the day. At mealtime, take out the chicken, shred it with two forks, and add it back to the pot. Throw in the diced avocado, cilantro and about 2 tablespoons of bottled lime juice if you are not using fresh lime wedges at serving. Stir well to distribute evenly. Serve, topped with the queso fresco and tortilla strips and fresh lime wedge, if using.
