Real Popeye's Red Beans

- 1 LB dry red beans shopping list
- enough water to cover beans shopping list
- 2 or 3 heaping tsp of "Halbert's House Seasoning" * to taste! shopping list
- (*2 TBSP granulated garlic, 1 TBSP each of onion powder, black pepper, and salt.) shopping list
- 3 PKGS Goya Jamon (ham) seasoning shopping list
- 1 TBSP brown sugar shopping list
- 1/4 tsp crushed red pepper or cayenne pepper shopping list
- 1 capful of smoke seasoning shopping list
- 1 TBSP olive oil (helps beans to not over froth in cooker) shopping list
How to make it
- Soak red beans overnight or use the quick (my preference) method of bringing beans to a boil and let set for 1 hour.
- Drain beans and add fresh water to cover.
- Add all the ingredients and bring to 15 lbs. pressure. Reduce heat and let the cooker rock for 10 minutes.
- Let pressure drop on its own, scoop out 2 - 3 cups of beans, mash 'em up and stir into cooker.
- Rice? Rice is nice, use your favorite recipe for white rice, Popeye's traditional.
