Thai Style Omelette

- 2 eggs shopping list
- 1 tsp lime shopping list
- 1 tsp fish sauce, plus a shake shopping list
- 1 tbsp water shopping list
- 1 tbsp cornflour shopping list
- about 5cm of spring onion, finely sliced (more or less to your taste) shopping list
- 3/4 cup oil for frying (I dont use vegetable oil, so I used 1/2 cup olive oil mixed with 1/4 cup of sesame oil, which added that extra layer of flavor) shopping list
- chilli sauce for dipping if you like it shopping list
How to make it
- Slice the spring onion. Squeeze half a lime. Get your other ingredients ready.
- In a small pan or wok (I only have one frying pan which is quite large, and it worked fine, it just spread out a bit more than I think its supposed to!) put the oil on to heat - you want to have it slightly smoking when you put the egg mix in.
- In a small bowl, crack the eggs, add the onion, lime, fish sauce, water, and cornflour and beat with a fork until the cornflour dissolves. Your oil should just about be ready.
- When the oil is slightly smoking, hold the bowl over it at about 20 cm, and in one go, pour the mixture in. It will get all puffy which is what you want! Flip after about 20 seconds, and leave the other side for 20 seconds. Place on paper towel for a moment to absorb any excess oil and serve!
