- 1 Cup onion...chopped shopping list
- 1/2 Cup carrot...shredded shopping list
- 1/2 Cup celery...chopped shopping list

- 16 ounces Whole oysters...coarsely chopped shopping list
- 8 Cups bread cubes...dried shopping list
- 2 Tablespoon parsley...snipped shopping list
- 1 teaspoon basil...dried,and crushed shopping list
- 1/2 teaspoon poultry seasoning shopping list
- 10 ounce package frozen chopped spinach,cooked and well drained shopping list
- About 1/2 Cup milk shopping list

- 2 Pounds parsnips...peeled,coarsely grind shopping list
- 2 onions...finely chopped shopping list
- 12 ounces carrot...finely chopped shopping list
- 2 Cups water shopping list
- 2 Cups white vinegar shopping list
- 1 and 1/2 Cups sugar shopping list
- 1 Tablespoon whole allspice shopping list
- 2 teaspoon salt shopping list
- 2 teaspoon mustard seed shopping list
- 1/2 teaspoon whole cloves shopping list
- Place all the ingredients in a large dutch oven,cover, and bring to boil. shopping list
- Then turn down to simmer,covered for about twenty minutes,or until vegetables are tender. shopping list
- Ladle into canning jars,adjust lids,and process in a water bath for about fifteen minutes,timing after water begins to boil. shopping list

- 3 Cups sugar shopping list

- 1 teaspoon orange peel,shredded shopping list
- 1/2 Cup fresh orange juice shopping list
- 3 ounces Liquid fruit pectin shopping list
- Paraffin shopping list
- Place sugar,rose wine,orange peel,and orange juice in a dutch oven. shopping list
- Bring to a full rolling boil and hold the boil for one minute,stirring constantly. shopping list
- Remove from heat,and immediately stir in pectin,skim off any foam. shopping list
- Place metal spoon in large clean,hot,heat proof wineglass. shopping list
- Then pour jelly into wineglass to within one eight from top. shopping list
- Remove spoon...Immediately cover each wineglass full of jelly with melted paraffin. shopping list
How to make it
- ~ Iridescent ~
- Have your oven preheated to 375 degrees.
- Wash the pheasants inside and out with the vinegar,place on plate to drain a tad.
- Rub the butter on the inside and outside of each pheasant,salt and pepper.
- Place the bacon slices on the bottom of a heavy dutch oven.
- Place part of the apple,and onion inside each pheasants,then lay them over the bacon slices.
- Filling around the sides of the pheasants with the remainder of the apples,and onions.
- Mix the apple brandy and apple cider with the thyme.Pour in and around pheasants.
- Roast uncovered until juices run clear.
- Remove the pheasants to a warm platter.
- Whatever combined liquid that remains in the dutch oven of the apple brandy and apple cider vinegar,plus the rendered juice from the pheasants,scrape up any browned bits from the bottom of the dutch oven that you have now place over an open flame.Simmer very softly,as you add the heavy whipping cream (you do not want this to boil ) Pour into serving gravy boat.
- ~ Rockefeller Dressing ~
- You will want this prepared before the pheasants and start to bake a while before.
- Cook the mushrooms,onion,carrot,celery,and garlic in the butter till tender.
- Drain the oysters,reserving liquid.
- Toss the bread cubes in a bowl along with the parsley,basil,poultry seasoning,salt and pepper.
- Stir in the vegetable mixture,oysters,spinach,and oyster liquid to moisten.You may need some milk to moisten further.Spoon dressing into a baking dish,cover with foil and bake until hot clear through and crispy on the outside edges.

- Clean,crisp,green salad with fresh grapefruit sections added ( Serving the salad after the main meal and before the dessert and cafe supreme seems to clean the palate so that you may be able to enjoy the after)

- Black Cake ( Jamaican Fruitcake)
- Apple Slush ( made with apple juice,apricot nectar,frozen lemonade,ginger ale...placed in freezer to freeze,allowing the mixture to stand at room temperature until partially thawed before serving in sorbet dishes.
- Cafe Supreme:
- 1 Cup Coffee Liqueur...1/2 Cup Brandy...1/2 Cup creme de cacao...1/2 Cup Amaretto(mix all of the liqueurs in a decanter) Add three tablespoons of the liqueur mixture in each belleek coffee cup,and fill with Strong Coffee...Top with Whipped Cream,and Grated Chocolate.
- Fire flickering in the fireplace,as the flame wraps itself around the birch,and the all familiar snap,crackle,pop of seasoned hard oak.The hipnotic,sensual,soft music drifting around the room,candle light licking at the air,toes curling under the warm berkshire faux fur blanket.'Go Away' door mat placed at the front door...Time...More Time!
