How to make it

  • ~ Iridescent ~
  • Have your oven preheated to 375 degrees.
  • Wash the pheasants inside and out with the vinegar,place on plate to drain a tad.
  • Rub the butter on the inside and outside of each pheasant,salt and pepper.
  • Place the bacon slices on the bottom of a heavy dutch oven.
  • Place part of the apple,and onion inside each pheasants,then lay them over the bacon slices.
  • Filling around the sides of the pheasants with the remainder of the apples,and onions.
  • Mix the apple brandy and apple cider with the thyme.Pour in and around pheasants.
  • Roast uncovered until juices run clear.
  • Remove the pheasants to a warm platter.
  • Whatever combined liquid that remains in the dutch oven of the apple brandy and apple cider vinegar,plus the rendered juice from the pheasants,scrape up any browned bits from the bottom of the dutch oven that you have now place over an open flame.Simmer very softly,as you add the heavy whipping cream (you do not want this to boil ) Pour into serving gravy boat.
  • ~ Rockefeller Dressing ~
  • You will want this prepared before the pheasants and start to bake a while before.
  • Cook the mushrooms,onion,carrot,celery,and garlic in the butter till tender.
  • Drain the oysters,reserving liquid.
  • Toss the bread cubes in a bowl along with the parsley,basil,poultry seasoning,salt and pepper.
  • Stir in the vegetable mixture,oysters,spinach,and oyster liquid to moisten.You may need some milk to moisten further.Spoon dressing into a baking dish,cover with foil and bake until hot clear through and crispy on the outside edges.

  • Cafe Supreme:
  • 1 Cup Coffee Liqueur...1/2 Cup Brandy...1/2 Cup creme de cacao...1/2 Cup Amaretto(mix all of the liqueurs in a decanter) Add three tablespoons of the liqueur mixture in each belleek coffee cup,and fill with Strong Coffee...Top with Whipped Cream,and Grated Chocolate.
