Keema Aloo Stuffed Peppers

- 1 large potato shopping list
- olive oil shopping list
- 400g beef mince shopping list
- 1 onion, sliced shopping list
- 1 thumb sized piece of ginger, peeled and finely chopped shopping list
- 4 garlic cloves, crushed shopping list
- 1 red chilli, deseeded and chopped shopping list
- 1 tbsp garam masala shopping list
- 1 tsp cumin seeds shopping list
- 1/2 tsp turmeric shopping list
- 1/2 tsp crushed chillies shopping list
- 400g can of chopped tomatoes shopping list
- 200ml beef stock shopping list
- 1 tsp sugar shopping list
- 4 red bell peppers shopping list
- 1 tbsp chopped coriander shopping list
- pinch salt shopping list
- pinch black pepper shopping list
How to make it
- Put the potato cubes in a saucepan of salted water, bring to the boil and cook for 3 minutes. Drain and set aside
- Heat a frying pan, add a dash of oil and fry the beef mince over a high heat for 8-10 minutes
- Add the onion, ginger, garlic, red chilli and all the spices, and continue cooking for 5 minutes
- Add the chopped tomatoes, cubed potatoes, and beef stock.
- Cook for 15-20 minutes, then add the sugar, salt and black pepper.
- Preheat oven to 200 degrees.
- Cut the bell peppers in half and remove the seeds and white pith with a spoon.
- Divide the mince mixture between the pepper halves, place on a baking tray and roast in the oven for 25-30 minutes.
- Garnish with coriander before serving.
