How to make it

  • Put the potato cubes in a saucepan of salted water, bring to the boil and cook for 3 minutes. Drain and set aside
  • Heat a frying pan, add a dash of oil and fry the beef mince over a high heat for 8-10 minutes
  • Add the onion, ginger, garlic, red chilli and all the spices, and continue cooking for 5 minutes
  • Add the chopped tomatoes, cubed potatoes, and beef stock.
  • Cook for 15-20 minutes, then add the sugar, salt and black pepper.
  • Preheat oven to 200 degrees.
  • Cut the bell peppers in half and remove the seeds and white pith with a spoon.
  • Divide the mince mixture between the pepper halves, place on a baking tray and roast in the oven for 25-30 minutes.
  • Garnish with coriander before serving.
