How to make it

  • Heat 2 tbsp of oil in a heavy based pan and fry the pork over a high heat until browned
  • Add the onion, bell pepper, carrots, garlic, chicken stock, tinned tomatoes, crushed chilli, and smoked paprika
  • Cover, and cook over a slow heat for 90 mins, the longer you cook it, the more tender the pork will become.

    I tend to use pork shoulder for this recipe but as you're going to be cooking it for 90 mins most cuts end up being quite tender. You definitely don't need to spend a lot on a more expensive cut.
