Cranberry Walnut Quinoa Pilaf

- 1/4 cup fruit-juice-sweetened dried cranberries shopping list
- 1/2 cup cooked quinoa shopping list
- 1 large whole organic egg or 1/2 cup organic extra-firm tofu shopping list
- 2 tablespoons walnuts, chopped shopping list
- 1 teaspoon fresh or 1/2 teaspoon dried rosemary, and dash cracked shopping list
- black pepper shopping list
How to make it
- Whisk the rosemary and pepper into the eggs. Add the cranberries and walnuts, and scramble, using a nonstick cooking spray. Serve over a bed of warm quinoa.
