Black Bean Tacos With Cilantro Jalapeno Guacamole

- 1 cup fresh mushrooms, chopped shopping list
- 1/2 cup fresh spinach shopping list
- 1/ cup onions diced shopping list
- 1/4 cup low-sodium vegetable broth shopping list
- 2 soft taco-size whole-corn tortillas shopping list
- 1/2 cup black beans shopping list
- 1/4 of a medium avocado, mashed shopping list
- Dash freshly ground cracked black pepper shopping list
- 1 teaspoon fresh, chopped cilantro shopping list
- 1 small jalapeno, diced shopping list
- wedges of fresh lime shopping list
How to make it
- Mix pepper, cilantro, and jalapeno into avocado and chill. On the stove top over medium heat, saute vegetables in broth until tender. Warm tortillas, fill with beans and vegetables (serve extra vegetables on side), and garnish with fresh lime and top with avocado
