Pear Ginger Almond Pancakes

- 1 small pear, sliced shopping list
- 1/ 3 cup all-natural buckwheat pancake mix shopping list
- 8 ounces nondairy "milk" shopping list
- 2 tablespoons sliced almonds shopping list
- 1/2 teaspoon fresh grated ginger shopping list
- 1 tablespoon lemon juice mixed with 1 tablespoon water shopping list
How to make it
- Toss the pear slices with the lemon-water mixture and ginger, and microwave for four minutes. Stir 2 tablespoons water into the pancake mix; add more water if needed or desired. Cook pancakes on the stove top until gold en, and transfer them to a plate. Top first with the pear-ginger mixture and then the almonds, and serve with a side of chilled "milk."
