Mediterranean Zucchini-Pasta Salad

- 1 cup artichoke hearts (canned or jarred in water, drained and rinsed, or vacuum sealed) shopping list
- 1cup fresh baby spinach shopping list
- 1 red bell pepper, diced shopping list
- 1 cup diced red onion shopping list
- 2 cups of zucchini, julienne or spiral cut shopping list
- 5 large red olives, sliced shopping list
- 5 large black olives, sliced shopping list
- 2 tablespoon red-wine vinegar shopping list
- 2 teaspoon Italian herb seasoning mix shopping list
- 3/4 cup crumbled organic feta cheese shopping list
How to make it
- Toss the zucchini with the vinegar, herbs, artichoke hearts, spinach, red pepper, onion, olives, and serve chilled. Top with 3 tablespoons of feta cheese before serving.
