Herbed Walnut Artichoke Lettuce Wraps

- 5 large outer romaine leaves shopping list
- 1/2 cup artichoke hearts (canned or jarred in water, drained and rinsed, or vacuum sealed) shopping list
- 1/4 cup diced onion shopping list
- 1/4 cup minced red bell pepper shopping list
- 1 serving all-natural whole-grain crackers (see package for serving size}, broken into small pieces shopping list
- 1/2 cup nonfat organic cottage cheese shopping list
- 2 tablespoons walnuts, chopped shopping list
- Dash cracked black pepper, shopping list
- 1/2 teaspoon minced garlic shopping list
- 1 teaspoon Italian herb seasoning mix shopping list
How to make it
- Fold the pepper, garlic, herbs, artichoke hearts, onion, red bell peppers, and walnuts into the cottage cheese. Fill the romaine leaves with cottage cheese mixture, and garnish with the cracker pieces.
