California Chicken Cilantro Burrito Bowl

- 3 or 4 romaine leaves, torn shopping list
- 1/2 cup all-natural salsa; shopping list
- 1/4 cup chopped green bell pepper shopping list
- 1/4 cup chopped onion shopping list
- 1/4 cup low-sodium vegetable broth shopping list
- 1/2 cup cooked brown rice shopping list
- 3 ounces cooked boneless, skinless chicken breast, diced shopping list
- 1/4 medium avocado shopping list
- 1/4 teaspoon minced garlic shopping list
- 1 tablespoon chopped cilantro shopping list
How to make it
- On the stove top over medium heat, saute the chopped peppers and onions in the vegetable broth until tender, and set aside. Toss the rice with the garlic and cilantro, and place in the bottom of the salad bowl. Top with the romaine and sauteed onions and peppers, and then the salsa, chicken, and avocado.
