How to make it

  • 1. Partly freeze beef till firm.
  • 2. Slice into 5 to 10 mm slices with the grain.
  • 3. Layer in a glass dish sprinkling dry ingredients between each layer.
  • 4. Mix brandy and vinegar and sprinkle over meat, trying not to wash off spices.
  • 5. Cover and marinade for 4 to 6 hours.
  • 6. mix meat around every hour.
  • 7. hang in well ventilated area or drier for up to 3 days.
