Beef Biltong

- 2 kilograms top side beef shopping list
- 150 grams salt shopping list
- 50 grams fresh ground black pepper shopping list
- 25 grams coriander seeds lightly crushed shopping list
- 50 grams brown sugar shopping list
- 150 millilitres brown vinegar shopping list
- 50 millilitres brandy shopping list
How to make it
- 1. Partly freeze beef till firm.
- 2. Slice into 5 to 10 mm slices with the grain.
- 3. Layer in a glass dish sprinkling dry ingredients between each layer.
- 4. Mix brandy and vinegar and sprinkle over meat, trying not to wash off spices.
- 5. Cover and marinade for 4 to 6 hours.
- 6. mix meat around every hour.
- 7. hang in well ventilated area or drier for up to 3 days.
