How to make it

  • Spicy Rice & Quinoa

  • In rice cooker, combine rice, quinoa, water, salsa, salt, and butter/oil; let cook.
  • Add cilantro and fluff with fork. Set aside.
  • Lentils

  • In saucepan, combine lentils and water. Cook on med-low until lentils are softened but not mushy and water is absorbed.
  • In a skillet pan (cast iron works best), heat oil/fat over med-high heat; add lentils and chipotles and fry for a couple minutes.
  • Remove from heat and stir in grated carrot.
  • Burritos

  • Layer rice and quinoa and lentil mixture; top with cheese
  • Fold into burrito shape and bake at 350 for 25 minutes.
  • Serve with sour cream, salsa and spicy cheese sauce.
