Lentil & Grain Burritos

- 6-8 whole-wheat tortillas (depending on size) shopping list
- 3/4 cup grated cheese shopping list
Spicy rice & Quinoa
- 1 cup rice shopping list
- 1/2 cup quinoa (red or black preferred) shopping list
- 2 cups water shopping list
- 1 cup salsa shopping list
- 2 tsp butter or oil shopping list
- pinch salt shopping list
- 2 tbsp chopped cilantro shopping list
Lentils
- 1 cup red lentils shopping list
- 1/4 cup puy lentils (optional) shopping list
- 1 1/2 cups water shopping list
- 1 carrot, grated shopping list
- 3 tbsp chipotle peppers (tinned), chopped shopping list
- 1 tbsp oil/bacon fat/lard/butter shopping list
How to make it
Spicy Rice & Quinoa
- In rice cooker, combine rice, quinoa, water, salsa, salt, and butter/oil; let cook.
- Add cilantro and fluff with fork. Set aside.
Lentils
- In saucepan, combine lentils and water. Cook on med-low until lentils are softened but not mushy and water is absorbed.
- In a skillet pan (cast iron works best), heat oil/fat over med-high heat; add lentils and chipotles and fry for a couple minutes.
- Remove from heat and stir in grated carrot.
Burritos
- Layer rice and quinoa and lentil mixture; top with cheese
- Fold into burrito shape and bake at 350 for 25 minutes.
- Serve with sour cream, salsa and spicy cheese sauce.
