Easy Carrot Cake

- 2 eggs shopping list
- 1 cup granulated sugar shopping list
- 1/2 cup vegetable oil shopping list
- 1 1/2 cups grated carrots (about 3-4 carrots) shopping list
- 2 Tablespoons unsweetened pinapple juice shopping list
- 1/2 cup chopped walnuts shopping list
- 1 1/4 cups all-purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
How to make it
- Preheat oven to 350 degrees and grease and flour a 9 inch square baking pan.
- In a large bowl, beat together eggs and sugar until creamy. Stir in vegetable oil until well combined.
- Add grated carrots, pinapple juice and walnuts. Mix well.
- In a separate bowl, combine flour, baking powder, salt, cinammon, and nutmeg. Mix well.
- Add flour mixture to carrot mixture; stir until just combined.
- Pour into greased and floured baking pan and bake for 25-30 minutes or until toothpick inserted in the center comes out clean.
- Allow cake to cool, then frost with cream cheese frosting
