How to make it

  • Preheat oven to moderate.
  • Combine lamb pieces, olive oil, oregano, carrots, celery, onion, salt and pepper in a large bowl and ensure lamb is coated.
  • Arrange individual lamb pieces on baking paper, add 1 bay leaf, wrap tightly, then wrap parcel again in a sheet of foil to avoid juices leaking .
  • Arrange in a baking pan with at least 2cm of water and cook for 2 hours, or until meat is tender.
  • Serve with a Greek salad and Greek-style yoghurt .
