Grilled Vegetable Salad Recipe

- 2 eggplants, thickly sliced shopping list
- 80g oyster mushrooms shopping list
- 2 red bell peppers, quartered lengthways shopping list
- 2 yellow bell peppers, quartered lengthways shopping list
- 2 courgettes, thickly sliced shopping list
- 150ml olive oil shopping list
- 1 tbsp oregano shopping list
- 80g hazelnuts roasted, coarsely chopped shopping list
- 1 bunch lettuce, torn into pieces shopping list
- salt and black pepper to taste shopping list
Vinaigrette Dressing
- 100ml olive oil shopping list
- 50ml red wine vinegar shopping list
- 1 tsp French mustard shopping list
- salt and white pepper to taste shopping list
How to make it
- Wash and cut all vegetables as indicated.
- Brush eggplant, mushrooms, peppers and courgettes with olive oil and cook under a hot grill.
- Place lettuce in a large bowl and drizzle with some of the vinaigrette.
- Season with salt and pepper to taste and arrange on a salad platter .
- Top with grilled vegetables and remaining vinaigrette and garnish with hazelnut pieces.
- To prepare vinaigrette dressing combine all ingredients in a jar, close tightly and shake well until completely mixed.
