Ingredients
  • PIE CRUST:
  • * 4½ cups unsifted flour
  • * ¾ teaspoon salt
  • * 1½ cups plus 2 tablespoons shortening
  • * ¾ cup water
  • PIE FILLING:
  • * ¾ cup sugar
  • * 4 dabs butter (one tablespoon each)
  • * 7 or 8 apples (enough to fill pie shell heaping full when peeled and cut)
  • * Cinnamon to taste (½ teaspoon or more)

Directions
  1. PIE CRUST: Lightly mix flour and salt. Add shortening and cut in with pastry blender. Add watr slowly until dough is proper consistency. Divide dough in half. Roll out two pie crusts. Put lower crust in 9-inch pie pan.
  2. PIE FILLING: Sprinkle sugar and cinnamon on crust. Dot with butter. Peel and cut apples and fill pie shell to heaping. Make slits in top crust and place over pie, sealing edges. Bake on lower rack of oven at 425 degrees for one hour or until apples are soft. (Lower temperature after 15-20 minutes at 300° F if crust browns too quickly.)
