Leftover Beef (chicken Or Pork) Noodle Salad

- For the salad: shopping list
- 4 oz. (1 cup) chicken, shredded or cut bite-size shopping list
- 1 cup black beans, drained and rinsed shopping list
- 1 hard-cooked egg, sliced shopping list
- 1 pkg. Ramen Noodle soup, cooked according to pkg. directions, with the seasoning shopping list
- packed added, drain the liquid shopping list
- 1 small roasted bell pepper (roasting the pepper gives so much flavor) shopping list
- 1/4 cup green onions, thinly sliced shopping list
- 1/4 cup shredded carrots shopping list
- 3 Tablespoons toasted almonds shopping list

- Honey Mustard Dressing shopping list
- 1/2 cup mayonnaise shopping list
- 1 Tablespoon honey shopping list
- 2 Tablespoons Dijon mustard or 1 Tablespoon French’s mustard shopping list
- 1 1/2 teaspoons rice vinegar shopping list
How to make it
- Cut, slice, or shred the salad ingredients and add to a large salad bowl. Make the dressing and gently toss all together. Makes 2 servings or 4 side dishes
- Honey Mustard Dressing
- Whisk the mayonnaise, honey, mustard and vinegar together and mix with the salad. Makes about 2/3 cup.
