How to make it

  • Cut potato's into cubes and boil is lightly salted water
  • Cook potato's until fork tender, drain and put in ceramic or plastic bowl
  • Fry bacon until very crispy and reserve drippings
  • Remove bacon from pan and let cool, when cool crumble.
  • Add Vinegar, Sugar and Pepper to drippings in fry pan and simmer
  • Add Onions and cook until they begin to soften then stir in mustard.
  • Pour dressing over the potato's, then add bacon and parsley.
  • stir well and serve warm
