How to make it

  • Preheat oven to 350 degrees
  • Spray 9x13 pan with Pam
  • Peel, seed and thinly slice the apples and set aside.
  • In a saucepan melt the butter and brown sugar
  • Pour sugar mixture in 9x13 pan and spread in bottom evenly
  • Combine eggs, milk, salt, 1 tsp cinnamon and ginger in a mixing bowl and whisk together well.
  • Place one layer of potato bread in bottom of pan. You may need to cut slices to fit.
  • Pour half of milk mixture over bread and top with apple slices.
  • Top apple slices by sprinkling with 1 tablespoon sugar and 1 tsp. cinnamon.
  • Top apple with another layer of potato bread and pour the remaining egg mixture over top evenly. Press gently with a spatula to ensure egg mixture soaks evenly.
  • Wrap with aluminum foil and refrigerate overnight.
  • Bake at 350 for 45 minutes covered and unwrapped and bake uncovered until golden brown. 15-20 minutes.
  • Alternately this may be filled with thinly sliced ham, Swiss cheese and strawberry jam for a Monte Cristo Bake.
