How to make it

  • In a deep saucepan over medium high heat, saute onion in oil 3-5 minutes
  • Add garlic and cook 1 minute more.
  • Add turkey and brown for 5 minutes.
  • Add bell pepper, corn and tomatoes. Bring to a bubble.
  • Stir in scallions, spices, hot sauce, salt, and pepper.
  • Reduce heat and simmer 10 min.
  • Reduce heat and simmer for 10 additional minutes.
  • Serve in bowls topped with cheese and tortilla strips on the side.
