How to make it

  • Place all dry ingredients in a bowl and mix well.
  • Mash squishy bananas with a fork in a separate bowl.
  • Add eggs, oil, soy milk and vanilla essence to dry ingredients and gently begin to stir through.
  • When semi mixed, add mashed bananas, and gently finish mixing.
  • Spoon into a loaf tin (lined) and bake at 180 for 40-50 minutes.
  • Enjoy with a nice cuppa!
