Banana Coconut Bread

- 2 c plain flour (I used gluten free) shopping list
- 1 tsp baking powder shopping list
- 2/3 c dessicated coconut shopping list
- 1/2 c brown caster sugar (it was all I had in the cupboard, original called for brown sugar) shopping list
- 3 eggs shopping list
- 1/2 c coconut oil shopping list
- 1/4 c soy milk (or your choice, would be nice with coconut milk) shopping list
- 1.5 tsp vanilla essence (this was all I had, original called for 2) shopping list
- Large dash cinnamon shopping list
- Small dash ground ginger shopping list
- 4 smallish over ripe bananas (about 1.5 cups, I forgot to measure) shopping list
How to make it
- Place all dry ingredients in a bowl and mix well.
- Mash squishy bananas with a fork in a separate bowl.
- Add eggs, oil, soy milk and vanilla essence to dry ingredients and gently begin to stir through.
- When semi mixed, add mashed bananas, and gently finish mixing.
- Spoon into a loaf tin (lined) and bake at 180 for 40-50 minutes.
- Enjoy with a nice cuppa!
