How to make it

  • Preheat oven to 325.
  • Combine dry ingredients in a medium mixing bowl.
  • Whisk together eggs, egg whites, and extract in a separate mixing bowl.
  • Add to dry ingredients, mixing just until moist.
  • Add almonds and mix thoroughly. The dough will be sticky, but
  • not so loose that it will not hold its shape. If it is too loose, gradually mix in small amounts of additional flour until the dough can hold its shape.
  • On a floured surface, divide batter in half and pat each half into a log approximately 14 inches long.
  • Bake for 30 minutes until firm.
  • Cool on a wire rack.
  • Reduce oven temperature to 300.
  • Cut biscotti into 1⁄2-inch slices.
  • Stand the slices upright (i.e. both cut sides exposed) on a cookie sheet.
  • Bake for an additional 20 minutes.
  • Let cool.
  • Store in a loosely covered container.
