Almond Biscotti

- 2 1/4 C Flour shopping list
- 1 C Sugar shopping list
- 1 t baking powder shopping list
- 1/2 t baking soda shopping list
- 1/2 t cinnamon shopping list
- 2 Eggs shopping list
- 2 Egg whites shopping list
- 1 T almond or vanilla extract shopping list
- 3/4 C Sliced almonds shopping list
How to make it
- Preheat oven to 325.
- Combine dry ingredients in a medium mixing bowl.
- Whisk together eggs, egg whites, and extract in a separate mixing bowl.
- Add to dry ingredients, mixing just until moist.
- Add almonds and mix thoroughly. The dough will be sticky, but
- not so loose that it will not hold its shape. If it is too loose, gradually mix in small amounts of additional flour until the dough can hold its shape.
- On a floured surface, divide batter in half and pat each half into a log approximately 14 inches long.
- Bake for 30 minutes until firm.
- Cool on a wire rack.
- Reduce oven temperature to 300.
- Cut biscotti into 1⁄2-inch slices.
- Stand the slices upright (i.e. both cut sides exposed) on a cookie sheet.
- Bake for an additional 20 minutes.
- Let cool.
- Store in a loosely covered container.
