Warm Sweet Potato Salad

- Warm Sweet Potato Salad shopping list
- 6 C peeled cubed ( ¾”) sweet potatoes shopping list
- ¼ c veg oil shopping list
- 1 onion thickly sliced shopping list
- 2 tsp thyme shopping list
- 1 tsp salt shopping list
- 2 Tbsp balsamic vinegar shopping list
- 2 Tbsp maple syrup shopping list
- 1 tsp fresh tarragon (I used a bit of dried oregano) shopping list
- 8 cups mixed greens shopping list
- ¼ cup dried cranberries shopping list
- ¼ c crumbled goat cheese shopping list
How to make it
- In large bowl, combine potatoes and onion and add 2 Tbsp of the oil, thyme and ½ tsp salt. Toss to coat.
- Spread on 2 large oiled baking sheets and roast at 375 for about 30 mins until potatoes are golden and fork tender, switching pans on racks and stirring ½ way through.
- Meanwhile, in small bowl, whisk together remaining 2 Tbsp of the oil, vinegar and maple syrup and tarragon and ½ tsp of the salt.
- In large salad bowl, place the greens and add the warm vegetables on top. Pour dressing over vegetables and add cranberries and toss. Crumble goat cheese over top and serve.
