How to make it

  • Preheat oven to 325. Mix ginger, salt, and pepper, and rub on chops. Heat 1 TBS. butter with olive oil in large frying pan and brown chops on both sides. Place chops in baking dish and surround with onions. Pour off oil from frying pan and add wine to deglaze. Cook over med heat, stirring, and add tomato paste. Simmer 2 minutes. Pour over chops. Top each pork chop with 2 apricot halves. Sprinkle with breadcrumbs, and dot with 1 TBS. butter. Bake at 325F for 45 minutes
