Apricot Pork Chops

- 4 Thick (1 1/2 inch) pork chops shopping list
- 1/4 tsp. ginger powder shopping list
- 1 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 2 TBS. butter, divided shopping list
- 1 TBS. olive oil shopping list
- 2 sweet onions chopped shopping list
- 1 tsp. tomato paste shopping list
- 1/2 C. red wine shopping list
- 8 canned apricot halves shopping list
- 3 TBS. bread crumbs shopping list
How to make it
- Preheat oven to 325. Mix ginger, salt, and pepper, and rub on chops. Heat 1 TBS. butter with olive oil in large frying pan and brown chops on both sides. Place chops in baking dish and surround with onions. Pour off oil from frying pan and add wine to deglaze. Cook over med heat, stirring, and add tomato paste. Simmer 2 minutes. Pour over chops. Top each pork chop with 2 apricot halves. Sprinkle with breadcrumbs, and dot with 1 TBS. butter. Bake at 325F for 45 minutes
