Val's Marjoram Spaghetti Sauce

- 4# Roma tomatoes shopping list
- 2 onions, peeled and halved shopping list
- 1 stick unsalted butter shopping list
- 1/2 tsp. celery salt shopping list
- 6 cloves garlic, halved shopping list
- 4 tsp. Italian seasoning shopping list
- 1 TBS. salt shopping list
- 1 tsp. sugar shopping list
- 1/4 C. marjoram shopping list
- 1/4 C. Romano cheese, grated shopping list
- 1/4 C. Parmesan cheese, grated shopping list
- 2 TBS. olive oil shopping list
How to make it
- Wash tomatoes, scald and peel. Puree. Add onion, butter, celery salt, garlic, Italian seasoning, salt, and sugar. Cover. Simmer gently 45 minutes. Taste and correct for spices. Puree. Bring back to simmer and add marjoram. Simmer 20 minutes more or until desired consistency is reached. Remove from heat, add both cheeses and olive oil. Stir thoroughly.
