How to make it

  • Wash tomatoes, scald and peel. Puree. Add onion, butter, celery salt, garlic, Italian seasoning, salt, and sugar. Cover. Simmer gently 45 minutes. Taste and correct for spices. Puree. Bring back to simmer and add marjoram. Simmer 20 minutes more or until desired consistency is reached. Remove from heat, add both cheeses and olive oil. Stir thoroughly.
