Nagamese Pork Recipe
This is a recipe from Nagaland, India. This has to be spicy. Nagas make it with the fat, which is yummier, but less healthy. Try this with chicken too.

  • Ingredients
  • 1 Kg. Pork meat (medium sized pieces)
  • 12-15 cloves of garlic
  • 10 gms ginger chopped
  • 20 gms dried bamboo shoots
  • 10-12 red chillies
  • 3 tbsp of oil
  • Salt to taste

Directions
  1. Shell the garlic
  2. Take seed out of red chillies
  3. Make a paste out of the red chillies, ginger and garlic
  4. Marinade the pork in this paste for about half and hour.
  5. Heat oil in a pressure cooker
  6. Add the pork and cook for 15 minutes on medium flame
  7. Add the garlic-ginger-chilly paste
  8. Add the salt
  9. Stir for 10 minutes
  10. Put 2 cups of water
  11. Add the dried bamboo shoots
  12. Pressure cook for 1/2 hour on medium flame or 4-6 whistles
  13. Make sure it has very little gravy
  14. Serve as an accompaniment with rice and vegetable stew.
