"Rigatoni Ala Vodka"

- 2 1 Lb Cans Of Italian Plum Tomatoes shopping list
- 1 Lbs Macaroni shopping list
- 1/2 Large Onion diced shopping list
- 4-5 cloves Of Garlic shopping list
- 4-5 Leafs of Fresh basil Or 1 Tsp dried shopping list
- Extra Virgin Olive Oil shopping list
- Unsalted butter shopping list
- White Wine A Splash shopping list
- Salt & Fresh Ground black pepper shopping list
- 1/2 Pint Of Heavy Cream shopping list
- About 1/4 Cup Of Vodka shopping list
- 1 Cup Of Italian Grated cheese - Locatelli recommended shopping list
How to make it
- Make a basic marinara sauce.
- Saute the onion in olive oil with a little salt and pepper and after they
- clarify add the garlic and one leaf of basil. If using dried basil add it . After the garlic softens add the wine. When the wine cooks off add the tomatoes. Bring to a boil and reduce to a simmer cook about 30 minutes stirring occasionally.
- Boil the macaroni but not completely in well salted water leave the pasta slightly hard not just AL-denta. Strain completely and add 1/2 stick of butter to a frying pan (I like to use a wok). Add the pasta you want to crisp some of the pasta so avoid to much stirring at first. Add some fresh ground black pepper.
- Now add your vodka and ignite it to cook off all of the alcohol. Now add your cheese when the cheese melts in add the heavy cream. Add the some sauce and adjust with a little more black pepper heat and serve. Top with some fresh chopped parsley and the rest of the basil.
