How to make it

  • Preheat oven to 375.
  • Lightly grease 9X13 pan.
  • Boil Macaroni according to pkg and drain well.
  • While macaroni is boiling, mix cottage cheese, sour cream and mustard (and pepper).
  • Add parmesan to mixture.
  • Add cheddar and colby jack.
  • Stir - will be kind of dry. Add milk and stir.
  • Add cooked macaroni when done and stir well.
  • Pour into prepared pan.
  • Bake 20-40 min depending on how crispy you like it. Husband loves the crunchy edges so we bake about 40 min.

    'Not to brag, but I followed the recipe! I followed the recipe! Yay for me! :D This is a good & different mac n cheese. Definitely easy & no leftovers! More melty cheese than cheese sauce That's just fine with me! Did I mention I followed the recipe? I was tempted because it appeared like it would be less-than-good without the pasta being coated, but I resisted. :) Thanks, Linz!

    This is the best macaroni and cheese I have ever tried! It is nice and cheesy with crisp edges. I subbed mozzarella for colby jack due to my son's preference. Otherwise, I made exactly as stated. The dijon mustard taste is noticeable and I was scared my son would not like it but he said it is "pretty good , it doesn't offend my taste buds." That may not sound like a ringing endorsement but coming from someone with sensory issues, who is incredibly finicky about food, it is a huge compliment. I can't wait for the next family get together so I can take this along. Thanks for sharing, Lindsay!
