How to make it

  • Prep Roast
  • Poke some slits in the skin of the roast with a sharp knife.
  • Roll 2 ( more if you like) lime around on the counter to soften, cut in half and rub over entire roast while squeezing the juice from limes, be sure and work some in slits in the skin.
  • Take the Garlic and Olive Oil "paste" and do the same as you did with the limes. work it well into the entire roast.
  • Salt and Pepper entire roast very liberally, don't be scared,it's a large piece of meat !!
  • Place in a covered container and pit it in the fridge over night or a bit longer if you choose.
  • Cooking the Beast
  • Remove roast from the fridge and put it in a large, deep roasting pan that can be covered. If using foil try and "tent" it
  • Add container of Beef Broth, squeeze in juice from remaining Limes and add onion to the pan around the roast, cover and let set at room temperature for a 1/2 or 3/4 of an hour.
  • Pre-heat oven to 350 degrees F.
  • Put roast in oven for about 4, - 5 hours for an 8 or so lbs roast, less time for smaller. Bottom line is you're looking for 180 degree at the thickest part of the Roast.
  • Once the Temperature is reached remove roast from oven and uncover. WATCH THE STEAM COMING FROM THE PAN !!! IT' LL BURN THE BLOODY DICKENS OUT OF YOU !!!!!
  • Increase oven temp to 425 degrees
  • Remove skin and set aside, Salt and Pepper newly exposed area of roast.
  • Place roast back in oven uncovered long enough to render some of the fat left from under the skin and roast starts to brown.
  • Remove roast from oven and let it rest 30 minutes.
  • Skin
  • Cut it into strips, put it on a rack and put it back in the oven until crisp
  • Gravy
  • Separate most of the grease from the pan drippings, put it in a pan with a cornstarch slurry and bring it to a boil until it thickens. Shouldn't need to add much seasoning.
  • Chunk up the roast or try and slice it if you choose, but it should be fall apart done. Serve with Mashed 'Taters and Gravy and a veggie of your choice, or you can chunk it up, throw it on a tortilla, squirt it with some lime and put some fresh cilantro on it.
  • No matter how ya slice it, it's good stuff!! Enjoy !
