How to make it

  • Chop onions, garlic , and bell peppers. Heat olive oil and saute the chopped veggies until onions are transluscent. Add carrots and saute until slightly soft. Add broth and canned vegetables, tomato paste, and oregano. After it comes to a boil lower the heat and simmer for 15 minutes. After 15 minutes add the tomato soup and simmer for 15 more minutes. Top with parmesan cheese.
