Italian Refrigerator Soup Recipe

Ingredients

1 yellow onion chopped

2 tablespoons of olive oil

1/2 red bell pepper chopped

1/2 green bell pepper chopped

3 cloves of garlic chopped

1 can whole kernel corn

1 can whole green beans

1 cup of carrots chopped

24 oz of chicken broth or vegetable broth if vegetarian

3 tablespoons of tomatoe paste

1 tablespoon of oregano

1 can of Progreso Tomato Basil Soup

You can use any combination of vegetables that you have as long as you keep the onion,garlic, pepper base.

Directions

Chop onions, garlic , and bell peppers. Heat olive oil and saute the chopped veggies until onions are transluscent. Add carrots and saute until slightly soft. Add broth and canned vegetables, tomato paste, and oregano. After it comes to a boil lower the heat and simmer for 15 minutes. After 15 minutes add the tomato soup and simmer for 15 more minutes. Top with parmesan cheese.
