Italian Refrigerator Soup

- 1 yellow onion chopped shopping list
- 2 tablespoons of olive oil shopping list
- 1/2 red bell pepper chopped shopping list
- 1/2 green bell pepper chopped shopping list
- 3 cloves of garlic chopped shopping list
- 1 can whole kernel corn shopping list
- 1 can whole green beans shopping list
- 1 cup of carrots chopped shopping list
- 24 oz of chicken broth or vegetable broth if vegetarian shopping list
- 3 tablespoons of tomatoe paste shopping list
- 1 tablespoon of oregano shopping list
- 1 can of Progreso tomato basil Soup shopping list
- You can use any combination of vegetables that you have as long as you keep the onion,garlic, pepper base. shopping list
How to make it
- Chop onions, garlic , and bell peppers. Heat olive oil and saute the chopped veggies until onions are transluscent. Add carrots and saute until slightly soft. Add broth and canned vegetables, tomato paste, and oregano. After it comes to a boil lower the heat and simmer for 15 minutes. After 15 minutes add the tomato soup and simmer for 15 more minutes. Top with parmesan cheese.
