How to make it

  • Preheat oven to 425. Line a cookie sheet with parchment paper, set aside. Take 1/2 cup sugar and add a pinch of salt to it. Sprinkle this mixture over your work surface. Mix the cinnamon in the other 1/2 of sugar. Unroll puff pastry and place it on top of the sugared surface. Sprinkle with the cinnamon sugar. Using a rolling pin, roll out the rectangle to about 13 inches, pressing the sugar into the dough. Visualize the middle of the pastry. You are going to start at both short ends and fold over half way to the middle. Repeat so the next fold, on each side, meet in the middle. Now fold those ends like your closing a book. You should end up with 6 layers. Cut into slices about 1/2 inch thick. Place on lined cookie sheet, cut side up. Bake for about 8-10 minutes until they begin to brown. Take out of oven and flip. Careful not to touch them with your fingers. Bake an additional 6-8 minutes. You'll need to watch the cookies. The sugar will caramelize and can burn quickly. Time is an estimate. Cool on rack.
