How to make it

• Heat the grill on high heat...cast you skillet on the grill,and then cover the grill lid for several minutes...sprinkle salt and pepper over steak...add oil to skillet...The oil should smoke to high heavens...using tongs,place the steak in the skillet,and cook on the grill without grill lid...about ten minutes...or...until signed,sealed,and delivered...turn steak in the skillet...holding upright with thongs,and cook a couple minutes.getting the sides involved here...and then place the steak uncooked side down in the skillet...Cook on grill,covered with grill lid for about seven minutes more,or,until done...I like a rare steak...one to where the red flows and shows.
• Add the butter and herbs with the garlic to the side of the skillet and cook a couple of minutes,or,until the butter foams...tilt skillet slightly and spoon butter mixture over steak several times...be careful it will sputter.
• Take the steak to the plate with the herbs,and garlic...let it stand for a few minutes or so and then slice against the grain.
• Serve with roasted mushrooms with red wine butter...haricots verts...orange section salad with drupes...hot rolls...Strawberry Irish Whisky Bread Pudding with White Chocolate Sauce
