- 1 lb chicken thighs shopping list
- 1 yellow onion shopping list
- 1 clove of garlic shopping list
- 14.5-oz can of tomatoes (diced) shopping list
- 7-oz can of chipotle en adobo shopping list
- ½ t Mexican oregano shopping list
- ½ c chicken stock shopping list
- cilantro shopping list
- canola oil shopping list
- black pepper shopping list
- salt shopping list
How to make it
- 1 Poach the chicken in simmering water for 20 min. Remove and set aside; slice or roughly shred when cool.
- 2 Combine 2 chipotle peppers plus 1 T adobo sauce with the tomatoes and purée until smooth.
- 3 Slice the onion and mince the garlic. Sauté both in oil until soft, about 5 min.
- 4 Add the chipotle/tomato sauce, oregano, chicken stock and reserved chicken. Continue to cook until sauce is reduced and thickened, about 10 min. Season to taste.
