How to make it

  • 1 Poach the chicken in simmering water for 20 min. Remove and set aside; slice or roughly shred when cool.
  • 2 Combine 2 chipotle peppers plus 1 T adobo sauce with the tomatoes and purée until smooth.
  • 3 Slice the onion and mince the garlic. Sauté both in oil until soft, about 5 min.
  • 4 Add the chipotle/tomato sauce, oregano, chicken stock and reserved chicken. Continue to cook until sauce is reduced and thickened, about 10 min. Season to taste.
