Slow Cooker Lentil And Ham Soup

- 1 cup dried Lentils (brown) shopping list
- 1 cup diced celery shopping list
- 1 cup diced carrots shopping list
- 1 small Onion, minced shopping list
- 2 cloves Garlic, minced shopping list
- 1 1/2 cups diced Ham shopping list
- 1/2 tsp. dried basil shopping list
- 1/2 tsp. dried Oregano shopping list
- 1/4 tsp. dried Thyme shopping list
- 1/4 tsp. ground black pepper shopping list
- 1 Bay Leaf shopping list
- 32 ounces chicken broth shopping list
- 1 cup Water shopping list
- 1/2 (14.5 ounce can) blended Diced Tomato shopping list
How to make it
- Mix all ingredients together in crock of a slow cooker. Cover and cook on high for 3 hours. Discard Bayleaf before serving.

- Directions for StoveTop:
- 1. In medium sized pot sauté minced onion and garlic in about 2 T. olive oil till soft on medium heat.
- 2. Add basil, oregano, thyme, and pepper, stir to mix ingredients.
- 3. Add diced celery, carrots, and diced tomato, stir and cook about 5 minutes to sweat vegetables.
- 4. Add chicken broth, water, bay leaf, and lentils, stir to mix ingredients.
- 5. Bring to low boil then reduce heat and simmer till lentils are tender about 30 minutes.
- 6. Add diced ham, cover pot, and let rest on warm so ham heats through.
