Sticky Lime Thai Chicken

- • 1/3 cup (85 ml) olive oil shopping list
- • 1/3 cup (85 ml) balsamic vinegar shopping list
- • 1/3 cup (60 ml) tamari or soya shopping list
- • 1/3 cup (60 ml) maple syrup shopping list
- • 3 Tbsp. (15 ml) of grainy mustard shopping list
- • Lime zest shopping list
- • 1 Tbsp. (15 ml) lime juice shopping list
- • 1/2 red pepper (finely chopped) shopping list
- • 1 Tbsp. ginger (grated) shopping list
- • 1 Tsp. fresh coriander (chopped) shopping list
- • 1 Tbsp. (15 ml) garlic (pressed) shopping list
- • 1 Tbsp. (15 ml) thyme (chopped) shopping list
- • Salt & pepper to taste shopping list
How to make it
- 1. Pour all marinade ingredients in a in a sauce pan over medium heat and bring to boil, stirring often. Remove from heat, pour into bowl and let cool in the fridge.
- 2. Place chicken in a bowl with ½ marinade, and refrigerate for 2 ½ hours or overnight.
- 3. Remove chicken from fridge. Preheat grill to medium heat. Place COOKINA BBQ sheet on grill, add chicken.
- 4. Cook for 15 minutes or until juices run clear, turning often and basting with extra marinade.
- 5. Serve on COOKINA Parchminum with lime quarters and garner with fresh coriander
